Farmer Matt has always had a passion for creating products in the kitchen from food that he has grown, foraged or bought from other local farms. But charcuterie is one of his biggest passions. He started long ago when we were still buying half hogs and pigs from other local farms. When we started growing our own heritage pork, it gave him the opportunity to really play. He took old family recipes and created his own versions of cured meats such as prosciutto, pancetta, coppa and salami.
Nitrate free, nitrite free, made from heritage pork raised on our farm in Woodbridge the salami was the first to make it to market. The original flavor, medium-heat Vida, was quickly followed by the hot Amour and the sweet Dulce. And Oui Charcuterie was born.
